Chef Hidemitsu Ashizawa from Tokyo, Japan will come to Kiji Sushi for two weeks this July. He is a master of Kaiseki, a traditional Japanese coursed meal, and a licensed Fugu (Blowfish) chef.

Kaiseki is a traditional Japanese dinner served with multiple courses. Similar to haute cuisine in Western cooking, Kaiseki balances textures with flavors, elegant design, and color. The Kaiseki menu is traditionally an offering composed of seasonal and local ingredients. The presentation should be inspired by the season, and the design elements of the plating, should have a harmony which compliment the integrity of each ingredient.
Chef Hidemitsu Ashizawa is considered a master of this style. He spent some time in the late 1990's coaching chefs in Baltimore, Maryland. He currently teaches for a culinary school in the Ginza District of Tokyo, Japan, where he is also a licensed Fugu chef. Kiji Sushi will host Chef Ashizawa for Kaseki and Sushi meals to be prepared this July. Each coursed meal is priced per person.
